Making The Oats Flour - Use only quick / instant plain oat. Take the oat in a mixer / food processor and blend until smooth - fine powder.
Mixing The Pancakes Batter
Take all dry ingredients -all purpose flour , oat flour , sugar, salt and baking powder in a fine mesh strainer and sieve for two to three times. Set aside.
Whisk the eggs in a wide bowl and add greek yogurt , milk and vanilla extract and mix until smooth.
Now add wet ingredients to the dry and stir JUST until combined. Pancakes batter is ready.
Making The Pancakes
To Make MINI Pancakes - use any small nozzle bottle dispenser (see picture below) / pastry bag fitted with small nozzle tip. Fill the pancake batter into the dispenser. Heat the griddle / pan in low heat / flame only. Once hot brush some butter on the pan . Dispense the batter slowly on the heated griddle into preferred pancakes size and cook until you see small bubbles on top.
Flip each pancakes carefully and cook until slightly browned and cooked. Repeat until the batter is used. Alternatively pancakes can be made in traditional way by pouring a scoop of batter using the ladle onto the hot griddle . Serve the pancakes with any topping you prefer or with pancakes syrup.
*Can skip oat flour and make the pancakes with full all purpose flour.
*Make sure the Baking powder is within the expiry date because, it is responsible for making soft and fluffy pancakes.
*Whole milk can be alternated with low fat milk or even almond milk.
*Quick Oats can also be replaced with old fashioned oat or Instant oat.
