Vegetables And Fruits Dosa | Indian-Style Pancakes Is “REAL” Food Packed With High Nutrient. Colorful And Tasty. Can Be Made Quickly For Any Meal. Great Way To Make Toddler – Kids Eat Healthy.

Nutritional Profile

Carrots – One serving of carrots is a half cup. Half cup of carrots are a great source of important vitamins and minerals. A half-cup can give you up to: 73% of your daily requirement of vitamin A , 9% of your daily vitamin K, 8% of your daily potassium and fiber, 5% of your daily vitamin C, 2% of your daily calcium and iron.

Beetroot – Beets contains fiber and potassium and is an excellent source of folate — just a half cup of cooked beets provides 17% of the recommended daily folate intake

Spinach – Two cups of dark, leafy greens each day. Two cups of spinach, offers more than 100 percent of your daily vitamin A needs, roughly 30 percent of your daily recommended amount of folate and vitamin C, and a whole lot of vitamin K.

Blueberry – It ranks the highest of any fruit for antioxidants (those free-radical-fighting powerhouses), and one cup delivers 14% of the recommended daily dose of fiber and nearly a quarter of the recommended daily intake of vitamin C.

Egg – One egg has 7 grams of high-quality protein, 5 grams of fat, and 1.6 grams of saturated fat, along with iron, vitamins, minerals, and carotenoids.

Turmeric A tablespoon of ground turmeric offers nearly a gram of protein, 2 grams of fiber and 6 grams of carbohydrates. Turmeric also contains magical nutrients – to keep you strong and healthy.

Recipe Has 5 different flavors of dosa. Each flavor is unique . You can make all flavor at once or just pick one or two and make it. When it comes to kids anything colorful and attractive is a win. At-least they will attempt to try the food. Once they like few flavors then it can made often. Idli – Dosa is a staple and popular food among Indians. So we as moms have to be more creative in providing the daily routine food . Else we end up getting a big no from kids. Definitely This recipe is worth to try it.

Why Pressure Cook The Vegetables?

It is better and safe (recommended by pediatricians) to cook vegetables before giving it to babies or toddlers. Hence pressure cooked without any water or salt for just one whistle.

But if you want to make this for grown ups , then you can just chop raw vegetables and directly add it to mixer /food processor and puree the vegetables. Skip the pressure cooking.

Add Extras In Batter For Taste And Texture

You can add more salt to suit your taste , add finely chopped onions , chopped green chilies for spice while mixing the puree with the dosa batter.

Thick Dosa Or Crepe ?

Thickness of the dosa depends on the personal preference.

Making it thick dosa – less dosa batter is added thus resulting in more nutrition (more vegetables Intake). I recommend making this way for babies , toddlers and kids.

Making it like crepe – thin dosa , More batter should be added while mixing it with puree for a spreadable crepe consistency .

Why Dosa Might Not Come Easily To Flip / Turn On The Tawa ?

Dosa batter consistency plays a major role here . Use freshly made dosa batter. Do not mix too much water to the batter while making the batter.

Always keep the flame in medium – low while making the dosa. Because more vegetable and fruits puree is added to the batter , dosa tends to be very soft. So it can get easily get burnt in high flame.

If you find it difficult to turn the dosa on the tawa , then mix few tablespoons of extra dosa batter to the puree and then make it.

Panam kalkandam / Palm Sugar Candy Can Be Added To Fruit Dosa 

To make sweet dosa – In a pan Melt palm candy with little water and add the required amount of syrup to the fruit dosa batter. This not only makes the dosa sweeter but palm sugar candy is a “Natural Cure for Cough and Cold”.

Serving Suggestions

For kids – Drizzle some honey or syrup like pancake over dosa . Or chutney , sambar can be served as a side.

Step By Step Pictures How To Make The Vegetables – Fruit Dosa

Ingredients Required and Preparation :- Wash / rinse all vegetable , greens and fruit in a bowl of warm water several times. Take all ingredients – spinach , carrots – Peel the outer skin of the carrots and chop it into small cubes , beetroot – Peel the outer skin of the beetroots and chop it into small cubes , blueberry , Eggs , turmeric , salt and idli / dosa batter (freshly made is better).

Pressure Cooking All The Vegetables – Greens

I used Indian Pressure cooker to pressure cook all the veggies and greens. Take all the chopped vegetables and spinach in a inner plate / vessel of the pressure cooker . “Do not add water or salt”. Put the gasket on the lid of the cooker and close the lid. When the steam bubbles along with the water, Put the weight on the cooker and pressure cook for ONLY ONE WHISTLE on high flame. Switch off the flame and remove the cooker from stove. Let the pressure release naturally. Open the lid of the pressure cooker. Let the vegetables and greens cool down a bit.

Grinding To Fine – Smooth Paste.

Spinach Puree Take the pressure cooked spinach in a mixer / food processor and grind it to puree – smooth paste . Do not add water while grinding. (leaves after pressure cooking will have enough water to grind)

Carrots Puree – Take the pressure cooked carrots in the mixer / food processor and first grind once or twice to break down the carrots cubes. Then add 1/2 cup water ( 90 ML) and grind to smooth paste -puree. (Add few tablespoons of water at a time to control the consistency – Puree should not be too watery ) .

Beetroots Puree – In a mixer / food processor add the pressure cooked beetroots and add 1/4 cup + 1 tablespoon water and grind to smooth paste / puree.

Blueberries Puree – Take the FRESH – WASHED blueberries in a mixer / food processor and puree / grind it  smoothly . Do not add water while grinding.

Making The Vegetables And Fruit Dosa

COMMON STEP – How To Prepare The Dosa – Place the Dosa pan / griddle on stove and HEAT on LOW FLAME only for few seconds or until slightly hot. Brush some melted butter on the pan / griddle. Pour a scoop of dosa batter to your preferred sizes on the pan and spread the batter little thick (not like a crepe for babies – toddlers). Wait for few seconds and spray some oil or butter over the dosa and flip the dosa carefully . Remove from pan once it is cooked ( dosa will be soft to touch ).

Beetroot Dosa (RED)- In a bowl mix the beetroot puree , 3/4th cup ( 135 ML) idli /dosa batter and A PINCH of SALT. Mix it well and prepare the dosa.

Spinach Dosa (GREEN)- Take the spinach puree , add 3/4th cup ( 135 ML ) Idli / dosa batter and A PINCH of salt in a bowl . Mix it well and prepare the dosa.

Carrots Dosa (ORANGE) – Add carrots puree , 1 cup (180 ML) dosa batter , A PINCH of SALT in a bowl . Mix it well and prepare the dosa.

Blueberry Dosa (BLUE )- Take blueberry puree , 1 and 1/2 cup (270 ML) dosa batter , A PINCH of SALT in a bowl . Mix it well and prepare the dosas.

Egg – Turmeric Dosa (YELLOW) – Break the egg into a bowl – whisk it and add turmeric to the beaten eggs , 3/4 th cup (135 ML ) of dosa batter , A PINCH of SALT. Mix it well and prepare the dosas.

Notes

*Adding A pinch of salt to the batter is completely optional. You can skip it to. But adding salt enhances the flavor of vegetables and fruits in the dosa.

*If you do not have dosa mold pan , use griddle or regular dosa pan.

*Always keep the flame in medium - low while making the dosa. Because more vegetable and fruits puree is added to the batter , dosa tends to be very soft. So it can get easily get burnt in high flame.
